Weekends...come and go!

What'd you do over the weekend?

In a few words...we got some good nights of sleep, I met friends for breakfast, watched the EAGLES win in playoffs, taught McKenna to do touchdown!, went to church and relaxed!

Days around here are long but weeks and months seem to fly by. Who has a 3 year old with an imagination of none other?? I DO! We currently are living in the jurassic time period and at any given moment will have a t-rex or triceratops stomping around our home! He does this all over the place. I had to make sure it was normal and ask the pediatrician to be sure I had nothing to be concerned about! I know more about dinosaurs then I ever wanted to! 

Dan and I have still been learning SO much regarding natural health and healing. It is a path that has opened to me that I never even intended to pursue. (God works in funny ways.) So anyways, we have been doing some research and are planning on cutting dairy from our diets for 30-60 days for some own personal health issues we think could possibly be related. I am excited to keep updates along the way!

For that reason, I am really have to buckle down and meal/snack plan and prep. (Side note: The kids are not going dairy free as of now.)

Some meals on the agenda for the week:

Asian Turkey Meatballs<--- have made this one before and we LOVE it. They are even better a day later. So, I plan to make a double batch!

Harvest Skillet Meal

Chicken Avocado Burgers

Some snacks we stick with:

- Plain rice cakes with organic creamy peanut butter and banana...or raw honey

- Hard boiled eggs! We eat A LOT of eggs in this house!

Weekly Round Up

Happy Friday guys!! I am excited for the weekend as I have plans to meet 3 of my best girlfriends from college for an early breakfast Saturday morning! I love how we can pick up exactly where we left off and do life together despite distance and time.

The kids are going to hang with daddy while I am with the girls and do some fun activities. Then we will be getting some much need work done around the house and watching some EAGLES football! (shhh...my husband is not an Eagles fan, so we bicker the entire time!)

So, this week, we had a great time catching up with friends while they came back to Delaware for a visit. Here are some other things I learned about or that made the week special!


Boogie Boards


So our Georgia friends has these for their girls and my kids LOVED them. You can draw and freeze it so the picture or list stays. Or you can just doodle. This is currently in my Amazon cart with plans for birthday or something else! Tip: get one for each kid or you will be playing referee!

Buffalo Turkey Stuffed Zucchini Boats



I found this recipe via Pinterest and decided to give it a shot this week because we do a ton of repeat meals and I wanted to try something new. We both really loved it and we had left overs for lunch the following day-- which is always a win in my world. If you love buffalo flavor and spice I would suggest using more then 1/2 cup. Definitely give it a try and let me know what you think!

Fruit Infused Water



My husband is the best gift giver ever. He is very thoughtful and intentional when he buys for others. He gifted me a water bottle similar to this one for Christmas. Since daily my goal is to drink half my body weight in water I have had to be creative with ways to remember! This has helped, not to mention the health benefits of adding fruits like lemon to my day!

So this is by far the softest, most comfy lounge apparel. I throw it on when I am cold or if I am laying around working. It is worth the investment [although I got as a gift] as I can't see it ever not being super comfortable.

Happenings Lately!

Happy New Year everyone! I am excited to have yet another goal of being more consistent with my blogging. I hope that 2018 provides me the time to do so.  Considering I am 10 days in and I am just getting to it...I am encouraging you not to hold your breath! 

So here is what has been going on around here. 


Organizing the home is in FULL effect! I recently tackled under my kitchen sink and organized, threw away and cleaned! It is amazing how much space you can find when you clean it up and organize it!

This was closely followed by our first snow day of the season. I consider it a true snow day if I can't get anywhere and entertain the whole day at home. We got creative and got creative early! First up, baking these delicious, healthy, Banana Chocolate Chip Muffins (I make them in the mini muffin pan [so adjust bake time if you try it the same way] & my kids inhale them!)! 




We went upstairs and took at bath at 8 am! Bath play time is always a go-to event for me, if I know we won't be going anywhere. I am raising water babies and they both race to the stairs when I say it is time for bath! 


Then some TV time. McKenna was obviously bored by now as she was trying to climb the TV console. That ended fast and I decided to allow them to wreck the kitchen and play with oatmeal and trucks...their very own construction sites! 
I may have had oatmeal all over the house BUT this activity bought me almost 45 minutes! They were loving it and playing so well together. 

 


I am going to keep this post kind of short as I have some new posts in the works! Here are a few quick pictures from our Christmas morning. I am so thankful that our families came to us and are allowing us to create new traditions and memories! We loved hosting everyone and I need to get better about remembering to take pictures of the food spreads...because we ate well!
